While cookies are year-round fare, nothing quite compares to Christmas cookies. Baking cookies during the holiday season is essential hygge. Whether you’re attending a cookie exchange party, making a Christmas Eve dessert or are simply having a craving for freshly baked cookies, this recipe is for you.
The Benefits of Matcha Green Tea
To keep things simple, I only used a handful of ingredients. The focal point of these cookies — and what gives them a beautiful green hue — is Green Foods ceremonial-grade Matcha Green Tea powder. Green Foods uses matcha powder that is organically grown and hand-picked in Japan. It has a vibrant, spring green color, velvety texture and the taste is out of this world. It is also non-GMO and soy free.
Not to be confused with green tea, matcha is a type of green tea. Matcha is made by grinding young tea leaves into a lightweight powder. Unlike green tea, matcha is made from the entire tea leaf; in turn, it is high in a class of antioxidants called catechins. Antioxidants can protect against free radicals, also known as oxidative stress, caused by environmental pollution, excessive exercise and exposure to chemicals. Compared to regular brewed green tea, matcha is higher in caffeine, making these cookies as energizing as they are satisfying.
All About Oat Flour and Ghee
To kick up the health factor, I used oat flour as the base. If you don’t have oat flour, simply grind (or blend) oats until they reach a flour-like consistency. Fresh oat flour is delicate, light and full of fiber. If you’re intolerant or sensitive to gluten, simply use gluten-free oat flour. For a nourishing fat source, I used ghee. In contrast to butter, ghee lacks casein and lactose. If you’re allergic to casein, lactose or both, ghee is a great swap. Saturated fat is essential for proper brain health and ghee is a high-quality source of saturated fat. Plus, ghee is a rich source of butyrate — a short-chain fatty acid that can heal and repair the digestive tract. Last but not least, ghee is chockfull of vitamins A, E, K2, omega-3 and omega-9 fatty acids.
Cookies Are Always in Season
Now, when it comes to baking Christmas cookies, the options are endless. A simple search on Pinterest, and you’re bound to find yourself deep in the recipe rabbit hole. Personally, I enjoy the art of intuitive baking and cooking. What does that mean? Instead of following a recipe to a T, I forego exact recipes and precise measurements in lieu of a much more relaxed, instinctive approach. Giving myself this freedom — and flexibility — allows for creativity to take the reins. Oftentimes this leads to meals, snacks and dessert being made on a whim. I like to use cookbooks, social media and blogs for inspiration, but I love the process of spontaneously throwing ingredients together. It’s therapeutic and enjoyable.
On that note, have fun making these cookies — they will fulfill all of your sweet-tooth cravings without sending you into a sugar coma. Enjoy.
MATCHA GREEN TEA CHRISTMAS COOKIES
Start to finish: 30 minutes
Servings: 12
Ingredients:
1 1/4 cups oat flour
1/4 cup coconut sugar
1 1/2 tablespoons Green Foods Matcha Green Tea powder
2 eggs
1/4 cup ghee, melted and cooled
2 tablespoons almond milk
1 teaspoon vanilla extract
1/3 cup white chocolate chips
- Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
- In a small bowl, whisk together eggs, ghee, almond milk and vanilla extract.
- In a large bowl, mix oat flour, coconut sugar and matcha green tea powder.
- Pour wet ingredients into dry ingredients. Mix evenly. Fold in white chocolate chips.
- Scoop batter and roll into 12 balls. Flatten each ball on your baking sheet. Bake for 10-15 minutes.
- Serve immediately. These tasty morsels will stay fresh in an airtight container for up to five days.
Nutrition information per serving: 133 calories; 13.3 calories from fat (10 percent of total calories); 7.7 g fat (4.5 g saturated; 0 g trans fats); 39 mg cholesterol; 15 mg sodium; 13.6 g carbohydrate; 1 g fiber; 7 g sugar; 2.5 g protein.
